With over 35 years of experience, not only is Paul a professional Master Baker but he is also a qualified flour miller.  His extensive career has spanned craft baking, research & development and Technical management.

Over 12 years ago, Paul set up Cinnamon Square, a bakery café, with a training centre to teach adults and children to bake.  Over the years, Cinnamon Square has won numerous awards for its products and other areas of expertise.

Paul is a member of the REAL bread campaign and is an expert in this field.  His latest products include botanical breads and using freshly milled flour.
